Recipes for redear sunfish

Being bigger on the average than other species of sunfish, shellcrackers are extremely welcome guests at any fish fry.

Redear sunfish make heftier and tastier filets than other sunfish mostly because of their larger size. They can be fried and grilled in a number of ways. Here is one popular recipe from Capt. Ron’s Ocean Explorer:

Ingredients:

2 to 3 pounds of cleaned, chunked pieces of fish

1/2 cup cornmeal

1/2 cup bread crumbs

1/2 cup flour

1 to 2 cups milk or buttermilk

Black pepper/Cajun seasoning to taste

Peanut oil

Lemon

Directions:

Heat oil in skillet or frying pan to 350 to 400 degrees. Combine cornmeal, flour, bread crumbs, pepper, Cajun seasoning in 1-gallon Ziploc bag. Place meat in milk, then into Ziploc bag, shake, take pieces out and carefully put into hot oil. Cook until golden brown. Serve with lemon and your favorite tartar sauce.
