South Carolina’s alligator hunting season opens this month, so it’s time to share this recipe from our friends at Louisiana Sportsman.
Alligator hunting is one of the wildest outdoor activities you can take part in, and if you haven’t participated in one, you’re missing out. Of course, that doesn’t mean you can’t enjoy this meal just as much, but like any wild game or fish recipe, it means just a little bit more when you bagged it yourself.
If you didn’t draw a tag this year, don’t fret, you can find alligator meat at many markets, and you can even order it online.
This recipe calls for a little bit of quite a few ingredients. It’s finished off with a toasted brioche bun, which makes every sandwich just a little better in my opinion.
This is a great recipe to enjoy for lunch or supper, especially when reminiscing about tagging that swamp lizard.
Fried gator sandwich
Fried gator sandwich starts with aquiring the alligator meat, which can be done in the wild during South Carolina’s gator season, which begins this month and ends next month.
But that’s not the only way to get yourself some gator meat. Many meat markets carry it, and if you can’t find it locally, you can order it online. LAcrawfish.com can hook you up with a wide assortment of alligator meat, and they’ll ship it to you quick enough that you can have it at your next gathering.
You’ll have no trouble finding any of the other ingredients for this dish, so it’s time to get cooking.
Of course, the marinade is important, and vacuum sealing the meat in with the marinade is a good step to letting those flavors really soak in. So get that going before you get started on the rest of the recipe, and it’ll be ready once you’ve got your oil heated up to the right temperature.
While many folks like to say “tastes like chicken,” when talking about alligator meat, the truth is, it’s got its own flavor. This sandwich is a great way to try it.

INGREDIENTS:
Alligator filets
Cajun seasoning
Trinity shake
Boil Booster
Pickle seasoning
Pickle juice
Hot sauce
Flour
Corn starch
Red onions
Banana peppers
Mayonnaise
Dried dill
Brioche buns
Lettuce
PREPARATION:
The first thing you want to do is slice your alligator meat into fairly thin slices. Then, give it a good dousing with some Cajun seasoning, Trinity shake, and some Boiler Booster. Add a little bit of pickle seasoning, and you’re well on your way.
Next, put it all in a plastic bag and pound it out with a kitchen roller or meat hammer. Get it nice and thin, the way you like your sandwich meat.
Now, pour a little pickle juice and some hot sauce in the bag, seal it up, then set it to the side so all those flavors can really soak in.
It’s time to make the dredge now. Here, we combine flour and corn starch, and add some Cajun seasoning, pickle seasoning, Trinity shake and a little Smashed Garlic Boil Booster.
Now it’s time to make some spicy banana pepper mayo. Cut up some red onions, pickled banana peppers, and combine them. Add some pickle brine and hot sauce. Next, mix a good portion of mayonnaise in there, then add a little dried dill.
Set that in the refrigerator to let the flavors combine, then check your oil. When it’s between 350 and 375 degrees, you’re ready to fry.
Dredge your alligator slices in the breading, then fry until golden brown. This will only take a few minutes, so keep a close watch on it.
Once it’s done, add a little salt, then toast the brioche buns. Add some mayo to the buns, put your gator slices on, add some more mayo, then dig in! It’s time to eat.
